Heeee hawww, the next stop was West Yellowstone, Montana at Wild West Pizzeria and Saloon. West Yellowstone is a cool little touristy town right next to Yellowstone Park. I met a guy in town named Steve from Chicago who claimed to be a "chicken parm specialist" and said this was the spot in West Yellowstone for chicken parm. He could only vouch for the platter though and never had the sandwich, which they call Billy The Kid. The first thing I noticed was the untraditional square-shaped bread - it was thick, a little crumbly and had a dominating garlicky flavor in the sandwich. It felt like the sandwich was all bread. The chicken was baked, not fried, and well-seasoned but was thicker than a cutlet that I prefer. The sauce was rich and delicious but was mostly covered by the dominant flavor from the bread. The melted mozzarella cheese was thick and spread evenly. This parm gets a #middlethumb. The staff was very friendly and accomodating and the pizza was really good. I'll need to go back and try the platter without the bread. Thanks for the recommendation, Steve.
